So today is National Rarebit Day, huh?
I’ve wondered what a rarebit was ever since reading about Little Nemo in Slumberland, but never bothered to look into it. Little Nemo is a fictional character created by American cartoonist Winsor McCay. He originated in an early comic strip by McCay, Dream of the Rarebit Fiend, before receiving his own spin-off series, the afore mentioned Little Nemo in Slumberland
Now, I’m kind of a grilled cheese aficionado. Well, maybe a fanatic, especially of the mayo and sharp cheddar on raisin bread variety toasted in butter. Yes, my cholesterol and blood pressure are fine, it’s not like I eat these very often, but every once in a while, I just want a truly great grilled cheese sandwich with a bowl to tomato soup. Don’t you?
I found this 2018 article, National Welsh Rarebit Day by Walter Thinnes, and in spite of the snark, and mostly because of the picture, I want to try one. I’ve looked into this rarebit thing, and it’s not just toast and cheese like I had initially assumed. Despite its alternative name being Welsh Rabbit, the Welsh rarebit does not contain any rabbit. The main body of a Welsh rarebit is made from Caerphilly cheese (not cheddar). You can buy what has been rated as the World’s Best Gorwydd Caerphilly online.
Gorwydd is an handmade Caerphilly made using a traditional recipe and heritage methods which will taste very different to a supermarket variety. True traditional Caerphillys like Gorwydd is described as having complex savory, salty flavors and a lactic, fresh, and citrussy centre, whereas Cheddar is a richer, creamier cheese with tangier notes. Both are great for melting and grating into cheesy dishes but for the traditional Welsh rarebit, Caerphilly's salty freshness supposedly has the edge.
The real difference is that Welsh rarebit is a grilled cheese toast based on a sauce, made from cheese, flour, beer, and often added egg. What? Sign me up for that one because it sounds fabulous! Looks like I’ll be ordering some of this specialty cheese from Venissimo Cheese here in town, because I’ll be damned if you think I’m going to spend one red cent at Whole Foods, because fuck Jeff Bezos. Twice. No, make that a dozen times. A thousand. Fuck that guy all the way to infinity and beyond, because billionaires shouldn't exist. Not a single one.
