Now that I was given a generous portion of chilies fresh from a Sri Lankan garden, I might try this recipe next. Once upon a time I too was using 老干妈 Laoganma as a standard, but have long gone my own way. Cardammon and star anis sounds tempting, very tempting when paired with so much goodness!

Combine chile flakes with peanuts, ginger, star anise, cardamom, Sichuan peppercorn, mushroom powder, sugar, salt, cumin, MSG (if using), and black pepper. Set aside.
