Welcome to #CheckIn for Sunday, September 5th

Here in the US and Canada, It’s National Cheese Pizza Day!
It’s also Father’s Day in Australia and New Zealand, but more importantly, it’s National Cheese Pizza Day! And I simply LOVE cheese pizza! Especially thin crust with light sauce and the cheese baked to crusty perfection. I’d even love it for Father’s Day!

When I was a child, my grandfather would take me down to a tiny pizza joint Little Italy called Filippi’s Pizza Grotto. It was a simply a long corridor with a market in front, packed to the rafters with imported goods, and dried meats, fish and squid hanging from the ceiling. In the back was a counter and some narrow booths jammed in next to the kitchen, where you could feel the heat of the pizza oven. Of course it’s now a large restaurant, expanding to three times its original size, (maybe four,) with fourteen locations from Tijuana to Norco, but that market, counter, booths and and oven are still there. And even though there are four large rooms filled with chianti bottles dangling above the tables and chairs, it's in those little booths that I like to sit.

Well, I guess I’m having pizza for dinner tonight, because Pizza Quattro Formaggi sounds really good to me right now. Fontina, Mozzarella, Gorgonzola, and Parmegiano-Reggiano on rossa, or maybe even Pecorino-Romano, Provolone, goat cheese, and Havarti. No telling what I’ll decide on. Have to check if I remembered to get more flour in.
