Latest blood test, low on iron once again. Not from the lack of vitamin B-12 this time, but from my diet. I'm eating iron rich foods, but...most of my diet has tannins that block iron absorbtion, coffee, kombucha, tree nuts of all kinds, beans, fresh fruits with skins on them, nearly the whole checklist of things that inhibit iron.
Since iron is required for pretty much everything in the body and taking away iron is the first thing the immune system does to kill what it doesn't like, I am in a pickle. Oh, pickles have added tannins too!
