Why howdy there #Checkin people! Today is National Taco Day! I apologize for the late #Checkin. My laptop went on the fritz.

The Name “Taco” is a modern invention. It originated from Mexican silver miners in the 18th century. Gunpowder was wrapped in a paper like a “taquito” and inserted into rocks before detonation. Tacos were known as the food of the working class, which included miners. The act of folding a comestible into a tortilla existed prior to the naming, it’s just that the name that is new. The eating food in or with a corn tortilla is thousands of years old, as tortillas have been around for many millennia.
Mayan legend says that the first tortilla was a gift. A peasant invented the corn tortilla as a present for his hungry king over 12,000 years ago. In the ancient highlands of modern Mexico, tortillas were a staple in both Mayan and Aztec diets.
My favorite taco is Tacos Al Pastor. Al pastor means shepherd style.
Tacos Al Pastor is made with spit-grilled pork. Cooking method is based on the lamb shawarma brought by Lebanese immigrants to Mexico, al pastor features a flavor palate that uses traditional Mexican marinade adobada.
Adobada is generally pork marinated in a red chile sauce with vinegar and oregano, but can refer to different types of meat, and to marinades closer to al pastor. Adobo or adobar (marinade, sauce, or seasoning) is the immersion of raw food in a stock (or sauce) composed variously of paprika, oregano, salt, garlic, and vinegar to preserve and enhance its flavor.
It's a popular street food that's spread to the United States. In some places of northern and coastal Mexico, such as in Baja California, it is known as taco de adobada. A similar dish from Puebla is called tacos árabes, or "Arab tacos.
Not sure if I need to invest in a new laptop or buy a used one.
