About twice a year I reduce balsamic vinegar, which is FANTASTIC for use on Mozzarella alla Caprese, or Watermelon w/ Goat Cheese "salad," or over drizzled on Romano Cheese, or on Strawberries, and even on ice cream.
This is two 750 ml bottles of balsamic vinegar (about 6 cups) being reduced to about three cups. The result tastes sweet like concentrated grapes and is not quite as thick as honey. These two squeeze bottles will keep all year before becoming too crystallized to use.
Please do not buy pre-made balsamic reductions from a mega-mart -- I have yet to find one that isn't just flavored sugar-syrup or worse, high-fructose corn syrup. Please just make it yourself.
