only today I got to know another banana variety [+]... the Ducasse Banana.

Known in Australia as the sugar banana, Ducasse is the most important banana in Thailand and is used for eating and cooking. Select fruit that is bright, yellow-green in colour and heavy for its size. When ripe it should yield to gentle pressure. Store at room temperature. ucasse bananas do not blacken as easily as other varieties when refrigerated. The blossoms of this variety are sold as a vegetable.

Bananas of Thailand

@Y A. this is for you from Thailand. Wild Bananas from the forests of Southern Thailand
Over twenty different varieties. Some are varieties are best cooked in coconut batter, some are as sweet as sugar and only the size of one's little finger - these are cooked with sticky rice and wrapped in a Banana leaf. Some are dried and sold with either a savoury or sweet flavour Others are huge - one Banana would feed a family. All are delicious and healthy.

Banana Ketchup Recipe

Ingredients
2 tablespoon peanut or vegetable oil
1/2 cup finely chopped sweet onion (about 1 small onion)
1/4
2 teaspoons minced garlic (about 2 medium cloves)
1 tablespoon finely chopped seeded jalapeño from (about 1 small jalapeño)
2 teaspoons freshly grated ginger
1/2 teaspoon ground turmeric
1/4 teaspoon ground allspice
1 1/4 cups mashed ripe bananas (about 4 large bananas)
1/2 cup white vinegar
2 tablespoons honey
2 tablespoons rum
1 tablespoon tomato paste
1 tablespoon soy sauce
1/2 teaspoon salt, plus more to taste
Water, as needed

varied the whole thing a bit, took 1.5 amount of all and, used Cachaça additionally to da rum, used 3 kinds of my own dried peppers and tamari sauce instead of the soy one... hm... tastes yummy.
