My go-to sourdough discard usage is to just put in a pinch of salt &baking soda to make one pancake. Tonight I decided to spread on peanut butter. Then I thought, "What about a couple mini chocolates and eat like a soft taco?" Voila, a peanut butter cup pancake "sandwhich" was born #food #sourdough

I'm on the third year of having a side batch of my sourdough starter unfed in the fridge. There is a "spore mode" the yeast goes into and becomes reactivated from. Years one and two the starter reactivated and I was able to make bread by the 3rd day. That's impossible if it was just basically a starter from scratch that happened to have remnants of the dead starter. Today is the third day, the day I'd be baking the loaf, and while the starter is more vigorous than it would be from scratch it is not ready for baking a loaf. I'll let it go on for one more day but the premise of infinite storage in spore mode in the fridge I think is out the window. It is still impressive that a mature starter can go two years between feedings and come back to full strength in 48 hours. I have enough starter to make it go for another 4-5 years but I think the point of the experiment is done now. #sourdough #bread #baking #YeastMasters

Finally got meself a stable routine for #baking #bread ^____^

In the past I've tried growing a "wild" starter on whole-grain rye flour but failed time and time again, but yay now I can just make rye #sourdough from fresh #kefir in a day, quite happy with that.

E-Ink Equipped Sourdough Starter Jar Monitoring CO2 Production And Height Stats With MQTT Output

Also known as sourdough starters, they are usually found in jars with curious names written on top, living off a mixture of flour and water. They require close monitoring to keep them healthy and to determine when they are ready for baking.

Noah wanted to be able to see recent CO2 production and height stats right on the jar, a ESP32 module with onboard E-ink display was used. To draw air over the CO2 sensor at a constant rate, a small extraction fan was also added. Power is provided by a small LiPo battery. For long term logging, the data is sent over MQTT to a server running Mycodo environmental regulation software.

There are still several software improvements Noah would like to make, including battery life, user interface and alerts, but everything is open-source and available on GitHub, so feel free to jump in and build your own.
