Back in march, I built myself a #smoker. It took some practice to master the art of getting a continuous stream of smoke from the sawdust, so I haven't smoked a lot of things yet. But since yesterday, I've had mozzarella, carrots and almonds in the smoker for about 13 hours -- just ready in time for lunch... And it's absolutely worth the wait!

I decided to cut up this beauty tonight. 20 litres of milk. 6 months of maturing. ~2 kg cheese. Great taste that reminds me of Prima Donna and the hard cheeses from Danish dairy Thise (who also provided the milk for the cheese).

I finally found the time to make some #cheese again!

Based on the same Maribo recipe as my last batch of cheese. But I've tweaked it a bit, trying to get the cheeses a little less salty.

I had too much curd for my big mould, so I made a small, flat cheese from the rest. I'm planning on making some sort of experimental cheese with this flat one. I just have to come up with a proper experiment. It will probably involve a bath of wine or beer. Any suggestions?
