Sunday baking done!

I love this lazy man's baking of no kneed bread recipe.

Takes a long time, but very little work to make.

Starting with cup flour, one cup of warn water, one table spoon of dry yeast, 1-2 teaspoons of salt, 1-2 table spoon of sugar, 2 table spoon of olive oil.

Mix all with a fork until it's all mixed well (it's very liquid so it's no wok at all).

Let it sit for about 40min to 1h until it doubles in size.

Add 2 cups of whole wheat flour (or normal flour if you don't have any) , 1 cup of body warm water and mix it with a spoon until it's smooth.

Let it sit for about an hour, or until it doubles in volume.

Just stear it with a spoon until all the air has gone out of the dough.

Por it into a large form or the baking sheet of the oven with silicone or oiled baking paper.

Add sesame seeds, or any other seeds you like (I used sunflowers). And spray with olive oil or cooking oil.

Let it sit for about 40min to 1h and warm up the oven to 200°C (400°F).

When it's warm enough, put the baking plate in the middle of the oven and let it bake until the top changes color (about 30-40 minutes).

Take it out, let it cool off for a while before cutting it into small pieces for either freezing it or eating it fresh.

Ash Reshteh is very popular in every Persian family gathering…❤️

Ash Reshteh-Persian Noodle soup 🍲
- 1/2 cup green lentils
- 1/3 cup red beans
- 1/3 cup mung beans
- 1/3 cup chickpeas

Soak in water for 12 hours then wash and strain. Put in a big pot ,cover with water bring to boil and cook on medium heat 40 minutes.add salt, turmeric,black pepper.

Add 1/2 bunch parsley chopped, 1/2 bunch cilantro chopped, 150 gram chopped frozen spinach , 1 bunch chopped scallions/ chives.cook for another 20 minutes.

In a large skillet fry 4-5 big onions sliced to half moon with 5-6 tablespoons oil till golden brown.add 1-2 teaspoons turmeric and mix. Take out 2/3 of the fry onion (for garnish)and pour in small bowl. Add 2 tablespoons dried mint to the 1/3 fry onion that left in the skillet and mix for one minute on low heat and add to beans pot .pour water if necessary. Add Persian noodles (1/2 bag) let cook 20 minutes.

Serve in bowl with fry onion and yogurt on top.💕Enjoy!

Time for Sunday baking.

Baking my new favorite bread. Easy mix and low effort. Here is how simple it is

Ingredients:
- one cup white flour
- 3 cups multi cereal flour
- salt to your taste
- 3 + 1 cups of warm water
- 2 bags of dry yeast

It is done in these few steps:

  • mix the 2 bags of yeast with one cup of warm water.
  • Add 1 cup general purpose white flour and mix it well to remove all the lumps. It has to be soft and mooshie.
  • let it rest for 20-40 minutes in rooms temperature under cover
  • After it has doubled in height, add 3 cups of multi cereal flour and the salt, plus the 3 cups of water.
  • mix them well together until all the ingredients are well mixed in a soft and watery dough.
  • let it rest in rooms temperature for 20-30 minutes until it has almost doubled in volume.
  • put baking paper or silicon one on a big oven form.
  • divide it into 2, lift the paper or silicon sheet up in the middle and put some oil over it.
  • put half of the soft dough in each side of the sheet and flatten it to cover the both sides of the form.
  • let it sit for 10-20 minutes
  • Warm up the oven to 200°C
  • mix 1 table spoon of white flour with 3 table spoon of water and one egg yolk.mix it Welland put aside.
  • brush the mix over the 2 pieces and make some holes in it with your fingers all the way to the buttom to keep it from bubbling into a balloon.
  • you can ass some chia, sesame or sunflower seeds on the top if you want to.
  • bake it in the middle of the oven for 20 to 30 minutes or until the top changes color

Take them out and put them on the counter top covered with a sheet to let it cool down

Enjoy your delicious new baked bread.
