#Vegetables are the most important source of nutrients nature has to offer. It provides alkaline-forming minerals, energizing proteins and a multitude of cell-protecting vitamins and secondary plant substances – with a really low calorie and sugar content. In addition, there are dietary fibers and enzymes which we need to ensure regular digestion. Greens such as leafy vegetables and salad should account for the major part of our diet as they reveal a wide range of nutrients and are good chlorophyll suppliers.

#Grasses unite all benefits of green vegetables in themselves –even exceeding them. Edible types include types such as wheat grass, barley grass, oat grass, couch grass and field horsetail. Some of them are available in health food stores but they can also be taken in as food supplements.

#Sprouts and germlings from the seeds of corn, legumes and other plants are loaded with minerals, vitamins, proteins and enzymes. In addition, they are more wholesome than raw or cooked peas, lentils and so on. Homegrown sprouts and germlings can usually be harvested within a few days and guarantee absolute freshness all over the year.

#Soy in the form of soybean sprouts as well as tofu is an excellent source of proteins and contains a number of unique secondary plant substances protecting not only the cells.

#Nuts, seeds and oils made of them provide valuable fatty acids. If you soak almonds, sesame or linseeds, you can even increase their nutritional value as the water activates the enzymes contained therein.

#Omega-3 fatty acids are important for maintaining heart and brain health. Omega-3 fatty acids are readily available in a wide variety of plant foods. Sources include walnuts, flaxseeds, chia seeds, hemp seeds, edamame, seaweed, and algae. Other green leafy vegetables and beans also contain small amounts.

#Herbs and #spices refine every dish and lend some extra health to it. Fresh green herbs provide us with an additional portion of chlorophyll. Garlic, onions and ginger in turn combat harmful micro organisms, and chili, cayenne and cumin stimulate digestion.

Kuku (Sabzi), a Persian version of a vegetarian frittata, is packed to the brim with fresh herbs and fewer eggs Bursting with delicious and healthy flavors.

It seems like they have gotten their information from some idiot LA Iranian who forgot to tell them that this is vegetable Kuku, and the name of it is Kuku Sabzi (vegetable Kuku) and we have many other types of the same as well.

But, it is a pretty good article if you are not a picky Iranian like I am :)

Huge harvest of fresh vegetables/herbs from 4 small pots on the balcony.

The aroma is just amazingm. 3 types of #Basil, #parsley, #chives, #dill, #spinach and #radish leaves.

Going to make a paste of it like my mother used to do l, similar to #Pesto, but with peppers and garlic added since these basils are different than the Italian ones used in Pesto.

Then some baking to eat fresh bread with the paste and Bulgarian feta cheese!

Eurêka!

I have been trying to find a vegetable that we had in Iran and was a MUST have item when eating kebab.

Google search and asking people pushed me towards Thai Basil. But after spending lots of money, buying both plants and seeds and trying them out, i could never find the strong smell and taste of Reyuan (ریحان) to satisfy my craving.

So last time i was in Paris, i bought all types of seeds they had and when I came here, started to grow them.

To my surprise, after the initial disappointment that only a handful of the seeds germinated and it didn't smell or taste much at fist, this morning i took the top of one 9f the branches to let 8r spread and almost jumped up of excitement.

Eureka!

I finally found what I've been looking for so long. It is a bit on a stronger side of the ones3qe had back in south of Iran, but the smell is amazing and soooo lovely.

Closing my eyes, i could smell the fresh Kebab on the bread, with lots of vegetables in the side. And the memories of walking to the best kebab place in our neighborhood buying 2 screwers for each person in the house and walking back trying hard not to nibble on the juicy bread soakesld in kebab juice, on the way back.

So here is the result of my successful exploration. Tukamaria vegetable seeds. Good for soaking in water and drinking when you have a cold. But also great for growing and eating with sandwich.

The leaves also have a fantastic effect of rasing the itchiness of mosquitoe bites.

So you can guess what I'm going to do in the afternoon!
