I cooked today's dinner which was a #vegetable #soup. About half the ingredients were home grown, including #Potatoes, #RunnefBeeans #Tomatoes and #Garlic Here it is being cooked.
And here is the result after blending.
I served it with crusty home made #bread.

An unboring carrot soup with a lemony tahini swirl, smoky spices, crispy chickpeas as croutons that's vegan and magical, mostly because it was inspired by one of my favorite snacks, carrots dipped in hummus.
Guess what I am going to cook for lunch tomorrow!

I made some #soup for dinner. The main ingredients were #tomatoes, #cauliflower, #celery and #GreekYogurt along with the usual #onion, #garlic and #seasoning. Not bad at all even if I do say so myself with some #bread.

Made a delicious 5 beans soup. With spinache, parsley, spring onions and dill from my balcony garden. Added w table spoons of craime fraiche and it's really great for a cold night like now.

Ash Reshteh is very popular in every Persian family gatheringβ¦β€οΈ
Ash Reshteh-Persian Noodle soup π²
- 1/2 cup green lentils
- 1/3 cup red beans
- 1/3 cup mung beans
- 1/3 cup chickpeas
Soak in water for 12 hours then wash and strain. Put in a big pot ,cover with water bring to boil and cook on medium heat 40 minutes.add salt, turmeric,black pepper.
Add 1/2 bunch parsley chopped, 1/2 bunch cilantro chopped, 150 gram chopped frozen spinach , 1 bunch chopped scallions/ chives.cook for another 20 minutes.
In a large skillet fry 4-5 big onions sliced to half moon with 5-6 tablespoons oil till golden brown.add 1-2 teaspoons turmeric and mix. Take out 2/3 of the fry onion (for garnish)and pour in small bowl. Add 2 tablespoons dried mint to the 1/3 fry onion that left in the skillet and mix for one minute on low heat and add to beans pot .pour water if necessary. Add Persian noodles (1/2 bag) let cook 20 minutes.
Serve in bowl with fry onion and yogurt on top.πEnjoy!
