Who is so freaking stupid to pay €7.49 for 1kg of flour?

This is an amazing way of ripping stupid people off. Special mix of flour for Kebab bread (aka pita) for almost 8 euro.

Gives 9 bread it says. Means each bread will cost about a euro eache.

I guess my grand mother was right, "as long as stupid people are around, the con man will never go hungry".

Time for Sunday baking.

Baking my new favorite bread. Easy mix and low effort. Here is how simple it is

Ingredients:
- one cup white flour
- 3 cups multi cereal flour
- salt to your taste
- 3 + 1 cups of warm water
- 2 bags of dry yeast

It is done in these few steps:

  • mix the 2 bags of yeast with one cup of warm water.
  • Add 1 cup general purpose white flour and mix it well to remove all the lumps. It has to be soft and mooshie.
  • let it rest for 20-40 minutes in rooms temperature under cover
  • After it has doubled in height, add 3 cups of multi cereal flour and the salt, plus the 3 cups of water.
  • mix them well together until all the ingredients are well mixed in a soft and watery dough.
  • let it rest in rooms temperature for 20-30 minutes until it has almost doubled in volume.
  • put baking paper or silicon one on a big oven form.
  • divide it into 2, lift the paper or silicon sheet up in the middle and put some oil over it.
  • put half of the soft dough in each side of the sheet and flatten it to cover the both sides of the form.
  • let it sit for 10-20 minutes
  • Warm up the oven to 200°C
  • mix 1 table spoon of white flour with 3 table spoon of water and one egg yolk.mix it Welland put aside.
  • brush the mix over the 2 pieces and make some holes in it with your fingers all the way to the buttom to keep it from bubbling into a balloon.
  • you can ass some chia, sesame or sunflower seeds on the top if you want to.
  • bake it in the middle of the oven for 20 to 30 minutes or until the top changes color

Take them out and put them on the counter top covered with a sheet to let it cool down

Enjoy your delicious new baked bread.

This is a sourdough rice bread. (That's probably the most suitable name.) But it didn't quite work out the way I thought.

I had spotted a recipe for a "rice bread" on Youtube, but I found parts of the process the young lady explained rather strange, so my process was very different.

She had soaked rice over night, then put that rice with its water, some salt, some sugar and yeast into a blender to create a kind of "rice mud". She had to be careful not to blend for too long so the temperature wouldn't kill the yeast. (Why not add the yeast after the blender?) She got a kind of very fluffy white bread out of it, but I think the crust (her bread had one) was slightly brownish.

Since the amounts she used looked very similar to my standard 1-2-3 bread, I ground 300g rice to flour/powder (more or less, my mill is rather small and not exactly powerful), added 200g water, then 100 g sourdough starter. The result is mud, I had to pour this into a form.

I used the same time and temperature for baking as usual, after letting it rest for about six hours, which resulted in a bread with very high hydration. The taste is...interesting. Unfortunately the bread didn't really rise, before baking I could have sworn it had at least a little. When I bake with oatmeal flour, the bread also doesn't want to rise, so this may be the same situation.

What makes me hesitate to try this again however is the fact that just like rice, this bread dries up quicker than regular sourdough bread. Maybe at a later time, with more thoroughly ground rice flour. Anyway, has anyone else tried making bread out of rice flour? I'm curious what the result was.

Sandy's Scrumptious Canned Bread (Keeps for One Year!)

Yes, It's Possible to Can Bread!

When my friend Sandy told me that she was going to be canning bread, I thought my ears were deceiving me. I've canned jam, peaches, pear sauce, and chicken, but my mind was blown when she said she cans bread and it stays good for up to a year. I'd never heard of anything like this before.

Then she took me out to her food storage, pulled out a jar, and let me try some. It was amazing! I was an instant convert and arranged to come back a few days later with my own jars to have her teach me.

Canning bread was surprisingly simple! It was so much faster and easier than some of the other canning I've done, and the final product is absolutely scrumptious!

Sandy says the bread stays good for a year, but it's so popular with my family and friends, that we had eaten all eight pints in a matter of weeks. It's going to be a challenge to have even one pint of bread last a year in our house with how quickly we want to eat it.

This is a fun recipe that you will want to make again and again. I also think that with a little ribbon tied around the jar, these would make great gifts.
