I am not good at taking food pictures, but this was one the food my younger one had been "dreaming about"!

The story of it, when we loved in Dundalk, border of the republic and northern Ireland and finding edible foodcat restaurants was really hard, unless we went to the 2 "fancy" restaurants that were ridiculously expensive and had to book weeks in advance.
So we invented a lot of food or grilled a lot because the meat there was absolutely fabulous. Always fresh and really cheap.

This dish is one that we just improvised with pork loin, red onion, cream (or cream cheese), with dry red wine and slow cooked into a thick stew.

Always served with rice and salad. But I didn't make salad tonight!

Doris waa so excited and loved it "like how she remembered itx that she ate so much and now we both sitting and watching a stupid TV shows on Netflix.

Early breakfast with homebaked #bread.

Let the bread cool down over night and woke up early to catch a train. Used 2 pieces of the part with olives, herbs and fried onions to make a few swedish Smörgås with one topping (my first store bought tomatoes since May 2022).

The results are great, but needs improvements.

  • Less #cheese, or higher flour/cheese ratio.
  • A little more salt
  • let the bread rise a bit more before putting it in the oven
  • Try making it with whole wheat instead of the one with seeds in it
  • No fried #Onions (doesn't add up to my smörgås taste that well

And to make sure I have good sandwich:
- Need more toppings for my smörgås

So, overall, it was a hoot try. Have bread for 11 more breakfast that I will freeze and take out when needed.

Super simple dinner

Cooked all the meat I bought yesterday and put most of it in freezer.

Then used one pack of taboule and one jar of chickpeas plus 5 frozen cubes of chopped spinach, some extra spices, a spoon of tomato paste and a little lemon juice to make a quick and easy stew that is enough for at least 4 maybe 5 meals with Paata or rice.

Good way of cutting back on red meat while eating healthy and good.

Sad part is, it generates a lot of garbage.
